I’m on a mission to eat more eggs for breakfast (rather than carby stuff), but don’t have the time to stand over a skillet while it cooks. Here is another good recipe that serves that purpose:
-preheat oven to 425*F
-in a greased muffin pan, place the following in each hole (in this order): one slice of prosciutto, pinch of shredded cheese, one egg
-season to taste
-bake 10-15 minutes or until egg sets (I get showered/dressed during this time)
-pop out of muffin pan and enjoy
